Sorry we’ve been MIA lately. I was sick, which slowed progress on some of our projects. Then, we’ve been spending a lot of our free time planning our kitchen remodel. (Guys, I think we’re tearing down a wall–a small wall, but still, a big deal!)
Also, I’m currently on an awful diet plan to try and figure out some potential food allergy issues I’ve been having. Needless to say, I’m hangry and lazy a lot of the time since I’m not eating as many calories each day. (That’s almond milk in this smoothie…not as good!)
Not that any of this is an excuse to stay away from you all–just trying to keep you in the loop a little bit better. I’ll try and do some fun projects this week while we’re all snowed in so I’ll have lots to talk about!
Speaking of that, Hubs and I are about to head out and brave the grocery stores tonight. We should have gone earlier since it will be a madhouse with everyone trying to grab their bread and milk before the snowstorm is supposed to hit tomorrow. But, we’re seriously running out of the foods I can eat…and since I can’t eat much…it’s essential we go to the store. I’m crossing my fingers that since bread, milk, and eggs (all food NOT on my diet) aren’t on our list, that we’ll make it without all the drama that can happen on the night before a storm.
Since I was sick, and it’s so dang cold outside, we’ve both been staying huddled up on the couch under blankets. In fact, we both read an entire book last week!
Yesterday, we went a Super Bowl watch party in which no one watched the Super Bowl, so that was fun. The boys spent most of the time in the basement playing ping pong (I won one of my 3 games, so that’s not as bad as I could have done!) and the girls pretty much just played with the baby. She was way more fun to watch than the game! (Thanks, Erin, for the photo!)
Also, this weekend, I made homemade vegetable soup, a giant pot of it, since fruits and vegetables are about all I’m eating right now. I’ve never made it before, but I think it turned out pretty well. In fact, I think it turned out well enough to share the recipe so I’ll have to do that for you guys when I make it next time.
I was pretty proud of myself for creating a recipe that tasted good while not including any of my “not-allowed” foods. I even made homemade vegetable stock to go in it!
So, there you have it, our little weekend update. Sorry again for skipping out on you guys last week! I’ll try and do better this week! Tell me what you’ve done lately—we need to catch up!
